Maybe, just maybe one will jump out of the window? :)

New summer favourite- Parma ham and nectarine salad with goat cheese
This salad was the best I had in a long time. The saltiness of the parma ham mixed with the sweetness of nectarines and green grapes, topped of with a sour vinegraitte made from olive oil, sea salt and balsamic vinegar, it all went perfect together.
This deliciousness was topped of with a creamy goat cheese! Extremely yummy!

Salmon with creamy sides
I just love creamed spinach, I think it is the best thing to have with fish! In addition to being tasty, it also looks good and the cream will really fill you up!
We also had some creamed corn with this, so gooood! Now, sweet corn is not exactly LCHF food, as it is fairly high in carbs, and creamed corn made the traditional way(with sugar) definitely isn't, but made without sugar I think it is an ok extra with your meat or fish as you don't eat that much of it. If it doesn't trigger any sweet cravings for you it's not a problem! :)

I made my creamed corn by blending half the corns until smooth, adding salt, pepper and a bit of garlic salt, the rest of the corn and cream, and just cook in a pot until it has thickened.
The creamed spinach is just as simple - take frozen spinach, add cream, salt and pepper and simmer until thickened.
I think this dish looks nice, and it tasted even nicer!

Quick LCHF Pytt-i-panna
Yesterday we didn't have much time to spend on cooking, and a lot of scraps and leftovers in the fridge.-Perfect for a pytt-i-panna! And that is what the word really means, you chop, fry up and mix whatever you have at home in a pan, and then it's done! It comes even better if you cream it! :)
Read more about pytt-i-panna here, from when I made a more luxurious version with really nice meats. This one was more a pytt-i-panna in the meaning of the word :)
The one we had yesterday contained of:
* Two mini sausages
* ½ packet of bacon
* 1 small onion
*Chicken that I brought home from a restaurant in a doggy bag :)
* Pumpkin
All chopped and fried in butter, then 1 dl of cream added to it, and served with fried eggs. It filled the two of us up and kept us going for football games and gigs the whole night! :)

LCHF Snacks
A lot of people that try to change their diet to a LCHF one instead miss certain types of snack, like chips and popcorn etc.
Here are two types of snacks that are yummy, salty and easy to make in the oven. I myself didn't use them for snacks, but as a side when we had tacos at home instead.
Parma ham and cheese chips, super easy to make and very tasty! Just put little piles of cheese, I mixed edam and a spicy cheese together, and parma ham cut into smaller pieces on an over tray, and slowly roast it until crunchy!

My favourite cheese - Morroccan Spice
Hot n' Sweet ribs with buttered broccoli
I have never been a huge fan of ribs, because I don't like bbq sauce that much, and ribs that you buy in a restaurant are always drenched in bbq sauce.
Don't get me wrong, I love sauces, but not bbq sauce when its too sweet.
However, if you make your own, you can adjust this as you want, I the way I like it is; less sweet, more spicey, and with a touch of honey.
This bbq sauce was pretty much the same as I made once before, you can find the link to that post further down.
But instead of having it with baby carrots, we served it with lightly cooked broccoli with a big chunk of butter and some sea salt flakes on top, and coleslaw (again!)
LCHF BBQ - Chicken, Halloumi and Coleslaw
For these warm (super warm here in Malta!) summer days it's always nice with a good old BBQ, easy, heathy and quick to make, and the variations are many.
This time we went for marinated chicken, a nice coleslaw with lots of mayo, and a fruity salad with a hint of lemon balm.
Of course me and my sister indulged this with a lot of bearnaise sause (very popular sauce in Sweden, and often an excellent LCHF choice), while my Irish fiancee went for a Guinness sauce. Shocking huh? :)

Start of with cutting the fresh or defrosten chicken fillets into pieces of your liking.
Make a marinade from oil (I had a special BBQ oil that is already seasoned, but this is definitely not needed,it's super easy to make your own marinade).
I added some finely copped garlic and lemon juice as well. Always try to add something acidy when you make a marinade, like lemon, wine or vinegar, as it really tenders the meat.
Put the meat in a plastic bag and add the marinade, and let rest for an hour or more. The longer the better really.
For the fruity salad I used:
Onion,
Lemon balm (a lemon tasting herb)
Nectarines
Yellow pepper
Cocktail tomatoes
Mache salad
Dressing:
Olive Oil
White vinegar
Sea salt
Pepper
Halloumi cheese with some olive oil and black pepper is being grilled.
Finished! Coleslaw as per previous recipe, halloumi, marinated chicken and some fruity and lemony salad! Yum!
Living La Vida Low Carb
Wow! I'm so happy to find that my blog is mentioned at one of the biggest Low carb sites in the world! Really cool!

LCHF Burgers
A quick, yet tasty and filling, all home made lunch today when we landed in Malta again! This was the first time I tried making burgers this way, with lettuce instead of buns, but I think it worked really well.
One of the fast food chains in Sweden, MAX, actually serves a low carb burger very similar to this!
The burgers themselves I made from:
½ kilo of minced beef
1 small onion, chopped into small pieces
Mustard
Salt
Pepper
Dried garlic
Cayenne pepper
1 small eggs
Mix everything in a bowl.
I also made a hamburger dressing from:
1 jar of ful fat greek yoghurt
3 table spoons of creme fraiche
2 table spoons of mayo
3 table spoons of mustard mayo, Heinz has a good one
3 table spoons of tomatoe paste
10 mini cornichons or pickles cucumber chopped into tiny little pieces
½ Onion, chopped into tiny little pieces
Mix everything in a bowl.
For other toppings, use whatever you like with you burger. Enjoy!

Back on track!
I'm back from my holiday in Sweden, and ready to produce some yummy and healthy LCHF recipes.
Long live the butter!
Btw, I have some interesting stories, and 'health tips' that I got while in Sweden, that I will tell you about as we go along. But I can say that not all 'camps' are as progressed and understanding when it comes to choosing low carb and high fat instead of the old style high carb and no fat!

Me so sorry
I'm really sorry for the poor updating, but I am currently in Sweden for a course, and will be for the rest of this week.
Not a lot of exciting cooking is going on right now, but the more when I get back home!

Coleslaw!
So simple and so good. Coleslaw is perfect to make a big batch of and just keep in the fridge, it goes with pretty much anything.
As you might have notice, I do carrots every so often in my cooking, even tho it is not necessarily considered LCHF food. But I think it's ok, it's such small amounts I use every time, and I think it gives a nice colour to the food as well. After all, food is a lot about presentation.
Anyways, coleslaw can easily be made without that carrot too, it depends on what you prefer. If you are eating LCHF because you are a sugar addict, maybe you should stay away from it, but otherwise I don't think it'll do any harm :)
I my coleslaw I use:
White cabbage,
A very small amount of yellow onion, not too much, you don't want it to be the dominating flavour.
Greek yoghurt, full fat
Mayonnaise, full fat
Mustard, a very small amount, a teaspoon or two
Salt
Pepper
Chili powder

One of my best friends...
...is my SodaStreamer, what an excellent invention! I love sparkling water, and I think it's the next best thing to have with dinner, taste wise, red wine comes first of course :)
I usually make a big bottles, and over carbonate it so that it is super bubbly, then take some frozen berries from the freezer and add a dash of lemon juice -Yum!
Very often we forget how unhealthy the drinks we have can be, and only look to what we eat. Juice for example, has an undeserved reputation of being super healthy and full of vitamins, which is not true at all. Well, it might be full of vitamins, but no vitamins that you won't get from eating meat, eggs, fish and vegetables, and it is definitely not healthy when you see how much sugar it contains.
Just to give you an idea of how much sugar some drinks contain, see below:
Orange juice, 10,6 g gcarbohydrates/dl - Usually you'd drink a lot more than 1 dl
Coca cola: 36,4 g carbohydrates/33 cl can
Full fat milk 3% 4,8 g carbohydrates/dl
Red wine 0,8 g carbohydrates/dl
Water 0 g carbs :)
Not as shocking as this though:
Frosties cereal 87,5 g carbs per 100 g - almost only sugar!!

Chicken legs with fruity salad
Another chicken dish, this time with a tastier part of the chicken -the leg. Very simple to make lots of, and it cooks itself in the oven. I bought a huge container of fresh chicken legs, threw them all in an oven tray, put the oven on 175 degrees, and mixed a marinade/glaze from what I had at home. I then cooked them for at least an hour, or until you can see that the meat is not pink anymore :)
The marinade was made from some honey, a lot of soy sauce, lemon juice, olive oil, salt, pepper, sesame seeds and chili.
This was served with a tasty and fruity salad which cannot be considered really LCHF with the fruits (preferably you should consume foods with less than 5 grams of carbohydrates/100 grams) but it was very good, fresh and a lot better than having rice or potatoes with it! :)
I used mache salad, sugar snaps, nectarines, tomatoes and a small amount of onion chopped very small. Season this with sea salt, olive oil and white vinegar and you have yourself and very yummy salad!
