Halloumi wrapped in ham for breakfast

Not much to explain there. Cut pieces of halloumi, wrap in ham (or bacon) and fry in butter in a pan until golden and soft.

I enjoyed this with some cherry tomatoes and coriander, and a bit 
of bearnaise sauce :)

Stuffed mini peppers LCHF style

These stuffed peppers I actually made as a starter for dinner, just because they were so cute, but you could easily have this as a main, I even had it for breakfast the other day. 3 small peppers were perfect for a breakfast!

It is actually a very simple recipe, you basically stuff the peppers with whatever suits your pallet. I fried up some minced beef in butter (of course!), seasoned it generously with salt, pepper, cayenne, garlic, cumin and some paprika. I also added a dash of cream and some hot salsa.

Before adding the mince into the halfed peppers, I added some philadelphia cheese. On top I sprinkled some mozarella cheese and very finely chopped yellow pepper and tomatoe. Then in the oven it goes, for about 5 minutes or until the cheese is melted and yummy!

Pizza flavoured egg wrap

A very simple snack/lunch/breakfast/picnic food to make is an egg wrap. It is basically like any other wrap that you can fill with what you like, the only differnce is that it is not bread. It is more like a very thin omelette that you wrap around the goodies. Just keep in mind, this is much more filling than a wrap made from bread, as the 'wrap' itself consists of two eggs, a bit of cheese and some cream!

Inspired by Monique's egg wraps, but with a pizza flavoured filling.

These are very good cold as well. Easy to wrap up in some foil and bring to work or wherever you are going where you might need a filling snack.

For the wrap/omelette I used whipped up two eggs with a dash of cream, salt, pepper, and some herbs like oregano and basil.
Also, I added a couple of table spoons of grated cheese, parmesan type, to get that pizza flavour going.

The rest is simple, just mix it up, add a bit of butter in a pan and fry slooowly on medium heat on both sides.



When the omelette is done, put it on a tissue to dry up a bit.

Spread tomatoe paste on the whole thing.


Add cooked ham, or smoked if you prefer that.

And cheese.

And then it's time to wrap it up!

New summer favourite- Parma ham and nectarine salad with goat cheese

This salad was the best I had in a long time. The saltiness of the parma ham mixed with the sweetness of nectarines and green grapes, topped of with a sour vinegraitte made from olive oil, sea salt and balsamic vinegar, it all went perfect together.

This deliciousness was topped of with a creamy goat cheese! Extremely yummy!

LCHF Snacks

A lot of people that try to change their diet to a LCHF one instead miss certain types of snack, like chips and popcorn etc.

Here are two types of snacks that are yummy, salty and easy to make in the oven. I myself didn't use them for snacks, but as a side when we had tacos at home instead.

Parma ham and cheese chips, super easy to make and very tasty! Just put little piles of cheese, I mixed edam and a spicy cheese together, and parma ham cut into smaller pieces on an over tray, and slowly roast it until crunchy!

LCHF BBQ - Chicken, Halloumi and Coleslaw

For these warm (super warm here in Malta!) summer days it's always nice with a good old BBQ, easy, heathy and quick to make, and the variations are many.

This time we went for marinated chicken, a nice coleslaw with lots of mayo, and a fruity salad with a hint of lemon balm.
Of course me and my sister indulged this with a lot of bearnaise sause (very popular sauce in Sweden, and often an excellent LCHF choice), while my Irish fiancee went for a Guinness sauce. Shocking huh? :)

Start of with cutting the fresh or defrosten chicken fillets into pieces of your liking.


Make a marinade from oil (I had a special BBQ oil that is already seasoned, but this is definitely not needed,it's super easy to make your own marinade).
I added some finely copped garlic and lemon juice as well. Always try to add something acidy when you make a marinade, like lemon, wine or vinegar, as it really tenders the meat.

Put the meat in a plastic bag and add the marinade, and let rest for an hour or more. The longer the better really.

For the fruity salad I used:
Onion,
Lemon balm (a lemon tasting herb)
Nectarines
Yellow pepper
Cocktail tomatoes
Mache salad

Dressing:
Olive Oil
White vinegar
Sea salt
Pepper





Halloumi cheese with some olive oil and black pepper is being grilled.



Finished! Coleslaw as per previous recipe, halloumi, marinated chicken and some fruity and lemony salad! Yum!

LCHF Burgers

A quick, yet tasty and filling, all home made lunch today when we landed in Malta again! This was the first time I tried making burgers this way, with lettuce instead of buns, but I think it worked really well.

One of the fast food chains in Sweden, MAX, actually serves a low carb burger very similar to this!

The burgers themselves I made from:

½ kilo of minced beef
1 small onion, chopped into small pieces
Mustard
Salt
Pepper
Dried garlic
Cayenne pepper
1 small eggs

Mix everything in a bowl.

I also made a hamburger dressing from:

1 jar of ful fat greek yoghurt
3 table spoons of creme fraiche
2 table spoons of mayo
3 table spoons of mustard mayo, Heinz has a good one
3 table spoons of tomatoe paste
10 mini cornichons or pickles cucumber chopped into tiny little pieces
½ Onion, chopped into tiny little pieces

Mix everything in a bowl.

For other toppings, use whatever you like with you burger. Enjoy!

Peperoni and brie omelette

This breakfast, as many others that I make, was made solely because these particular ingredients were sitting in the fridge, on the verge of expiring. Anyhow, this time it turned out to be a very tasty, and extremely filling omelette filled with brie cheese and peperoni

I think I had this before going out for a two hour power walk with the dog and I was still full when I came back. do I think it's fair to say that it is a good, hearty meal that will make you last for long!
