The salad mix is made out of ruccola salad, pieces of sweet melon, pomme granate, tomatoes and a bit of yellow peppers.<br />
In addition to that, pan fried chicken thigh fillets seasoned in salt, pepper and BBQ seasoning, oven dried parma ham until it goes really crunchy, and to top it off, my interpretation of a ceasar dressing - mayo, lemon, garlic and dijon mustard! I don't really care for the taste of anchovies so I skip that totally.<br />
<br />
All in all, this salad definitely goes in to the favourites for this summer. Filling, yummy and very LCHF! Try it out!<br />

It is actually a very simple recipe, you basically stuff the peppers with whatever suits your pallet. I fried up some minced beef in butter (of course!), seasoned it generously with salt, pepper, cayenne, garlic, cumin and some paprika. I also added a dash of cream and some hot salsa.<br />

This idea, like many others I get, spawned from a thai beef salad I had at Zest here in Malta not so long ago. I thought it tasted amazing, so I tried to recreate it.<br />
The key things to make this good, and to get that thai flavour is fresh coriander, fish sauce, fresh chili and fresh ginger.<br />
And of course a good meet. I used fillet of beef, not very cheap but oh so yummy!<br />

I sliced my fillet thinly and marinated in the juice of one lime, 2 table spoons of fish sauce and two table spoons of soy sauce.</div><div class="separator" style="clear: both; text-align: center;"><br />

The meatballs have to be small and round, and seasoned with mustard and all spice, then they will get that traditional flavour, just like my grandma used to make them.<br />

Now, since I obviously want to make this dish low carb, I can't go for mashed potaotes, so I made cauliflower mash instead. Really yummy and creamy. And as for the jam, you just can't take that away :) Have a little less is a better option I think.<br />

Anyone can make it really, and it's quick and easy to make a big batch of.<br />
<br />
This chicken stew/fry got it's fresh taste from both fresh ginger that I grated, and fresh lime juce and pieces.<br />
<br />
Other than that, the only things you need to do is:<br />
<br />
* Cut fresh chicken into pieces of your taste<br />
* Grate the ginger<br />
* Fry the chicken and ginger in butter<br />
* Add salt, pepper, cayenne pepper, and curry powder and mix<br />
* Add the juice of one lime <br />
* Add 3-4 dl of fresh cream<br />
* Let simmer for a bit <br />
*Chop a red pepper and sugarsnaps and add a couple of minutes before serving.<br />
<br />
Don't forget to taste and add more flavours if needed.<br />

In addition to being tasty, it also looks good and the cream will really fill you up!<br />

We also had some creamed corn with this, so gooood! Now, sweet corn is not exactly LCHF food, as it is fairly high in carbs, and creamed corn made the traditional way(with sugar) definitely isn't, but made without sugar I think it is an ok extra with your meat or fish as you don't eat that much of it. If it doesn't trigger any sweet cravings for you it's not a problem! :)<br />

I made my creamed corn by blending half the corns until smooth, adding salt, pepper and a bit of garlic salt, the rest of the corn and cream, and just cook in a pot until it has thickened. <br />
The creamed spinach is just as simple - take frozen spinach, add cream, salt and pepper and simmer until thickened.<br />
<br />
I think this dish looks nice, and it tasted even nicer!<br />

Parma ham and cheese chips, super easy to make and very tasty! Just put little piles of cheese, I mixed edam and a spicy cheese together, and parma ham cut into smaller pieces on an over tray, and slowly roast it until crunchy! <br />
