And no...

..your brain does not need carbohydrates to work. It needs glucose. And your body is quiet smart, so it has the ability to produce glucose from protein and fats :)

Why Low Carb High Fat?

Well, first of all, because that is how people are supposed to eat, and how we were eating for milliones of years before the 'new foods' like flour and sugar were introduced into our lives.
That by the way, was also around the same time that diabetes, dental problems, obesity and a lot of other illnesses were introduced.

Below are just a few reasons for why someone should replace all the sugar we eat with more healthy fats. By 'all the sugar' I mean bread, pasta, rice, fruits, juices, sodas and many other things.
  • LCHF will normalize your weight, if you stick to it. It's the best way to loose weight and to stay there. No calorie counting ever again!
  • No more cravings
  • No more binging
  • No more stomache problems
  • Most people will sleep a lot better
  • No need for snacking between meals
  • Full for a long time
  • Perfect if you like to train a lot!
  • Increased energy
  • Decreased migraines, love it!
  • All in all, you will feel healthier and better, I can guarantee you that!
And on a side note, it is very good as well! :)

Chocolate fondue and yummy brie

For dessert last night we enjoyed a chocolate fondue, mostly because I bought a fondue thing earlier in the day, but also because it's very, very good! :)
I also made brie in the oven with some nice toppings. That too was very tasty, and I can highly recommend both desserts.


Melted dark chocolate, strsawberries, coconut flakes and chopped walnuts. Take a strawberry, dip it in the chocolate and last but not least, dip in one of the toppings.


The brie cheese wich I sliced off  the wax from the top, then added a layer of honey, and finished off with chopped walnuts. Then it stayed in the oven for maybe 20 minutes on 150 degrees, and came out absolutely lovely! :)


Cauliflower gratin

Perfect side instead of potatoes or pasta. Very filling and easy to make as well! :) All the cream and cheese in the makes it very filling, so you don't need a lot of it. I had a small plate of this in the afternoon today, and stayed full for maybe 5 hours even though I went for an exhausting squash session at the gym in between!



Anyways, this is how you make it.

1 cauliflower head
4-5 dl of fresh cream
Grated cheese, any type that you like. I mixed mozzarella and edam.

Salt,
Pepper,
Garlic powder,
Any other spices of you choice

Chop up the cauliflower in to semi small pieces and put in in oven tray. Season as you wish and sprinkle 2-3 handfuls of cheese on top, and then pour the cream over everything.

Grate in the over for an hour on 175 degrees celsius, or longer on a lower heat. You can user a higher heat setting in the beginning and then turn it down. The longer you keep it in the ower, the better really.

Italian style meatballs


These turned out very good. Could be eaten as they are, or with something on the side, salad for example.
Very juicy a full of flavour. I really dislike meetballs and patties that are not seasoned enought. It's better to go mad with the spices than not to use enough.

This is what you need for 4-5 portions:

½ kilo of minced beef, fresh
1 onion, chopped
2 eggs
1 teaspoon of dijon mustard

Seasoning:
Salt, quite a bit
Pepper
Garlic powder
Garlic Salt
Oregano
Basil
Paprika powder
Some Italian spice mix I use, containing different peppers, garlic and herbs.

Sauce:
½ can of crushed tomates
A dash of fresh cream
Some salt to bring out the flavours

Mix everything and let it 'rest' for an hour or more.

Melt a big chunk of butter in a frying pan while your shaping 8-10 meat balls. When the butter has gone quiet, fry your patties a couple of  minutes on each side.
Then pour over the tomatoes and the cream, add some salt, and let everything simmer for 20-30 minutes.

A Friday snack

So simple and so good! Bacon rashers and a glass of red wine :) 

It also keeps you full and happy for quite a few hours!


Migraines

Can migraines be related to what we eat and do not eat? I am convinced it is highly related, but of course not entirely based on that. But someone like me who has suffered from extremely bad migraines since child hood, cannot make it go away completely, but we can definitely help it and help ourselves to less attacks and less severe migraines.

First of all, we can stop stressing so much, cos for many migrain sufferers the attacks are related to stress, but that's a given. We shouldn't stress a lot, full stop.

But secondly, we can eat better  and more natural food, and eat less of foods that will trigger migraines. Migraines can be triggered by a lot of the hormone insuline being released in your body, and high levels of insuline are caused by too much carbohydrates, too put it simple.

I myself can truly tell the difference if I eat a lot less carbohydrates, and instead I eat fat to get full, and I now have one migraine attack every 3-4 months as opposed to 2-3 attacks a month that I used to get.

I also remember when I was a kid and we tried to figure out what caused my migraines, we at some point came to the conclusion that orange juice always triggered it.
The question is though, was it orange per se or the fact that a glass of orange juice is practically a glass of sugar?

After squash spinach soup with crispy parma ham

Perfect after a nice game of squash, and very tasty too!

 

For 3-4 portions you need:
1 Onion, chopped
10-15 chunks of frozen spinach
Butter
Water
2-3 dl of cream
1 dl of tasty cheese like cheddar or old dutch

1 packet of Parma ham

Salt
Pepper
Cayenne
Garlic salt
Garlic, dried
Vegetable stock cube








Eat more fat!

So, what is this low carb high fat thing all about? It's about eating natural foods, foods that people, and most other animals for that matter, are supposed to eat. Food we have been eating for millions of years, before the thousands of years we have been eating and even growing grains, corn and cereal and before we could make flour and sugar etc.
I am talking about meat, fish, chicken, vegetables and natural fat like butter, cream, olive oils and coconut oil and butter. No artificial shit like margarine and light products that are stuffed with things we really should not be eating. 
I dont think you even want to know how margarine is made. I might tell you here one day, but I promise you, you won't like it.
But think about it, if you have a product that normally contains, let's say 30% fat, and it has been made into a light version with maybe 5% fat, a lot of the natural things have been taken out right? And what's even more scary, a lot of things must have been added.
In a lot of cases, what has been added is sugar and artificial flavour enhancers, and other things that are really not good for our bodies.

I believe we have been mislead for all our lives into believing that fat is what makes us unhealthly, fat and sick, when in fact in sugar and flour that are the real bad guys.
I think that if all people started eating less carbohydrates in the form of white flour and sugar, and more natural foods like animal fats, meat and fish, humans in general would become much, much healthier. We would decrease overweight, obesity,diabetes and a lot of other issues we have today, and still be able to enjoy fresh, natural, good tasting food!

How can people not see the pattern?

We have become so much unhealther and sicker since flour and sugar and other foods rich in carbohydrates were introduced to our lives, and so to the extremes since the advise of fat being bad and dangerous to eat was first introduced. Coincidence?

Creamy chili and garlic pork

This turned out very yummy. When I cook fillet of pork I like to marinate it, it makes it very tender and tastes so much more.
Marinating in a bit of chili sauce, soy sauce, ginger and garlic gave the meat and sauce a bit of an oriental flavour, which I like. 

For marinating the meat:

1 fillet of pork, trimmed and cut into medallions
2 cloves of garlic
Salt
2 table spoons of soy sauce
2 table spoons of hot chili sauce
Chili powder 
Ginger powder

For the rest:
1 onion
1 carton of cream

I put everything in a plastic bag and when for a 1,5 hours walk!


When you come back from your walk, heat a pan and melt a big chunk of butter in it. Then put the meat medallions in the pan. 

A this point I also chopped an onion into to tiny pieces and put in a small pot with a piece of butter to let it go soft.


When the onion is soft, put it into the pan with the meat, and then pour cream over it, as much as you like to have sauce, and let it simmer on low heat. I used maybe 4 dl. Taste and use more spices if needed, I added some more salt and ginger.


The finished product! 
Served with cauliflower and broccoli mash. Yummy!



Butter and cream

Your best friends when cooking. Tasty and, despite what you have been told when growing up and in magazines - very healthy as well. I will elaborate on that later, and hopefully manage to convince some of you :)

 

Spicy chicken and veg stoup

A love myself a good stoup, which is what I call a dish you can't label either a soup or a stew, it's kind of a mix in between the two. The trick that makes this, and any soup, really good is the handful of mixed (in a blender) sweet corn that is then mixed into the stoup.
This one got a bit of a thai flavour to it because of the ginger, chili and coconut milk.

Spicy chicken and veg stoup, 6 portions.

2 fresh chicken breast filets
1 onion
1 small can of sweet corn
1 carrot
1 quarter of a cauliflower head
1 quarter of a broccoli head
1 can of beansprouts, fresh ones instead of you have
1 can of coconut milk, not light
3 dl of fresh cream
Butter, real not margarine

Spices; Chicken stock, salt, pepper, garlic salt, chopped garlic, cayenne pepper and lots of ginger.

Chop the chicken and the onion into small pieces and fry in a big pot with a BIG chunk of butter. Season the mix generously with garlic, chicken stock, cayenne and ginger. We're talking maybe a table spoon of ginger here. If you are using fresh ginger it is of course a lot better but I didn't have any at home, so powder had to do.

When the chicken is cooked and infused with the spices you can pour over the coconut milk and the cream and let it simmer.
Put half the can of sweet corn into your blender, or use a stickblender, and mix it into a smooth paste. Put this in the pot.

Cut the carrot into small, small pieces as well as the cauliflower and the broccoli. Taste and make sure you are happy with the taste, if not add more salt, cayenne and ginger. Then put all the veg into the pot, and cook for 5-10 minutes.

Very filling and very good, and kind of cheap as well for so many portions!

Food, food, food!

I have previousily attempted to blog about my life and what I do on a daily basis, and I have failed. I lost interested I felt that I didn't have interesting enough things to write about.
Food however, I always felt I could write about. I love to eat and I love to cook, and I'm more than pleased to share what I am cooking and eating with the world! :)

I eat what is commonly known as LCHF food, at least most of time, because I believe this is what humans are supposed and design to eat, but also because it tastes really good and it makes me feel good.
