Yoghurt, berries and nuts for breakkie

Myself I love to eat eggs for breakfast. It keep me full for a long time and can be made loads of different ways.
But, when I need some variation, this is one of my other favourites. It also works as a dessert :)

Greek yoghurt mixed with a dash of cream. Some half frozen berries of your preference, and nuts and seeds. I used sun flower seeds, almost and walnuts!

Yummy!

Meatball frenzy no 2 - Swedish meatballs

Swedish meatballs are, clearly, the best meatballs in the world! :) That's probably not true to the majority of the population, but for me and a lot of other Swedes there is nothing better than meatballs cooked the Swedish way, enjoy the traditional way with mash, cream sauce and lingonberry jam.

The meatballs have to be small and round, and seasoned with mustard and all spice, then they will get that traditional flavour, just like my grandma used to make them.

Now, since I obviously want to make this dish low carb, I can't go for mashed potaotes, so I made cauliflower mash instead. Really yummy and creamy. And as for the jam, you just can't take that away :) Have a little less is a better option I think.

For the meatball mix:

Minced beef, onion, mustard, tomato paste, cream, salt and all spice. And two eggs! :)

Mix everything and let settle.

Boil cauliflower slowly in salted water.

Roll small, small meatballs. This is the time consuming part. Make sure the meat is properly seasoned now, maybe by tasting it or test trying a bit before, if raw meat freaks you out.

Fry the meatballs in a lot butter in batches, not all at once as they won't get a nice browning then.
Blend the cauliflower with a stick blender when it's soft enough, and add some butter, 2-3 table spoons of creme fraishe and salt until you are happy with the taste.
Let it thicken in the pot while frying all the meatballs.

Yum!

Sauce is extremely important in the Swedish cuisine. This classic sauce is simply made from cream, beef stock, some salt and a dash of soy sauce.

Meatball frenzy no 1 - Italian meatballs

Two different types of meatballs the past week, both good but in different ways. First out - Big Italian style meatballs in tomatoe sauce!

You need minced beef, onion, garlic, herbs like thyme, oregano, basil and pepper.

Chop the onion and the garlic into tiny little pieces and put in a bowl with the meat.

Add salt, pepper, herbs and 1 dl of cream. Also add 2 eggs to the mix.

Mix everything and let settle for 30 mins. Then roll big meatballs.

Fry the meatballs in a big chunk of butter at the same time as you let some broccoli and cauliflower boil in lightly salted water.

Add two cans of crushed tomatoes, together with some more herbs, salt and garlic salt. More cayenne pepper if you like it a bit spicy.

Let it simmer until you are happy with the flavour of the sauce.

Serve with either boiled vegatables or something else that you like :)

Enjoy!

Awesome LCHF snack & dessert

Chévre cheese and crushed walnuts! For more of a dessert feeling, add some drops of honey! :)

Creamy curry & ginger chicken

A very simple dish! Anyone can make it really, and it's quick and easy to make a big batch of.

This chicken stew/fry got it's fresh taste from both fresh ginger that I grated, and fresh lime juce and pieces.

Other than that, the only things you need to do is:

* Cut fresh chicken into pieces of your taste
* Grate the ginger
* Fry the chicken and ginger in butter
* Add salt, pepper, cayenne pepper, and curry powder and mix
* Add the juice of one lime
* Add 3-4 dl of fresh cream
* Let simmer for a bit
*Chop a red pepper and sugarsnaps and add a couple of minutes before serving.

Don't forget to taste and add more flavours if needed.

New summer favourite- Parma ham and nectarine salad with goat cheese

This salad was the best I had in a long time. The saltiness of the parma ham mixed with the sweetness of nectarines and green grapes, topped of with a sour vinegraitte made from olive oil, sea salt and balsamic vinegar, it all went perfect together.

This deliciousness was topped of with a creamy goat cheese! Extremely yummy!

Salmon with creamy sides

I just love creamed spinach, I think it is the best thing to have with fish! In addition to being tasty, it also looks good and the cream will really fill you up!

We also had some creamed corn with this, so gooood! Now, sweet corn is not exactly LCHF food, as it is fairly high in carbs, and creamed corn made the traditional way(with sugar) definitely isn't, but made without sugar I think it is an ok extra with your meat or fish as you don't eat that much of it. If it doesn't trigger any sweet cravings for you it's not a problem! :)

I made my creamed corn by blending half the corns until smooth, adding salt, pepper and a bit of garlic salt, the rest of the corn and cream, and just cook in a pot until it has thickened.
The creamed spinach is just as simple - take frozen spinach, add cream, salt and pepper and simmer until thickened.

I think this dish looks nice, and it tasted even nicer!

Quick LCHF Pytt-i-panna

Yesterday we didn't have much time to spend on cooking, and a lot of scraps and leftovers in the fridge.-Perfect for a pytt-i-panna! And that is what the word really means, you chop, fry up and mix whatever you have at home in a pan, and then it's done! It comes even better if you cream it! :)

Read more about pytt-i-panna here, from when I made a more luxurious version with really nice meats. This one was more a pytt-i-panna in the meaning of the word :)

The one we had yesterday contained of:

* Two mini sausages
* ½ packet of bacon
* 1 small onion
*Chicken that I brought home from a restaurant in a doggy bag :)
* Pumpkin

All chopped and fried in butter, then 1 dl of cream added to it, and served with fried eggs. It filled the two of us up and kept us going for football games and gigs the whole night! :)

LCHF Snacks

A lot of people that try to change their diet to a LCHF one instead miss certain types of snack, like chips and popcorn etc.

Here are two types of snacks that are yummy, salty and easy to make in the oven. I myself didn't use them for snacks, but as a side when we had tacos at home instead.

Parma ham and cheese chips, super easy to make and very tasty! Just put little piles of cheese, I mixed edam and a spicy cheese together, and parma ham cut into smaller pieces on an over tray, and slowly roast it until crunchy!

My favourite cheese - Morroccan Spice

Hot n' Sweet ribs with buttered broccoli

I have never been a huge fan of ribs, because I don't like bbq sauce that much, and ribs that you buy in a restaurant are always drenched in bbq sauce.
Don't get me wrong, I love sauces, but not bbq sauce when its too sweet.

However, if you make your own, you can adjust this as you want, I the way I like it is; less sweet, more spicey, and with a touch of honey.

This bbq sauce was pretty much the same as I made once before, you can find the link to that post further down.
But instead of having it with baby carrots, we served it with lightly cooked broccoli with a big chunk of butter and some sea salt flakes on top, and coleslaw (again!)
